It turned out that I didn't thin mine at all and it was perfect after it set. It was just as good the next day as it was on the first. I had a horrible time finding a decent red onion, though. I searched through the whole bunch and found one that I thought was firm and it was soft after I got it peeled - lost about half of it! It was real nasty in the center.
