cupboard baked beans (Recipes)

My daughter gave me a bag of dry beans that she had gotten in a gift basket. I have never made beans from scratch. So I grabbed some stuff out of the cupboard. The bag said to soak the beans overnight then rinse them before baking or boiling. I don't have patience. I rinsed them, threw them in a crockpot, covered with cold water and turned them on high. After 5 hours I threw in diced onion and cut up cheap sausage. At this point the beans were semi soft. Added a can of tomato soup and about a 1/4 cup brown sugar. I went to church then visiting family. When I got home I tried them and they turned out perfect. Now I hope they freeze well so I have them for my oldest grandsons confirmation party next week.

That's great to know that we can do it without waiting. Most people probably don't have the patience. Hope they turn out very well for your confirmation lunch.

I have been making my beans in the crock pot also. I rinse my beans then put them in water and bring to a boil and simmer them till you can blow on a bean and the skin starts to come loose. Then i put them in the crock pot with water, brown sugar, molasses, onions, little liquid smoke, pieces of thick sliced bacon, i believe some side pork and maybe a little mustard powder. Cook on low 8-10 hours and stir a few times adding more brown sugar or molasses as they cook till i get the color and taste i want. I remember reading two things about making beans. One, if you simmer them just till the skin starts to come loose that it releases the product in the bean that causes people to get gas from them. Second, if you add salt when making beans it will cause them to get hard. I don't know if either of those statements are true.

My grandma always said never to put salt in when making baked beans. So I never do. :-) :-) :-)
